Brown Butter Chocolate Chip Cookies
12 tablespoons butter
1 tablespoons olive oil
3/4 cup brown sugar
1/2 cup white sugar
1 egg + 1 yolk (make sure these are large eggs)
1 teaspoon vanilla
1/2 teaspoon salt (add 1/4 teaspoon more if not using salted butter)
1 3/4 cup all purpose flour (8.7 ounces)
1/2 teaspoon baking soda
8 to 12 ounces of chopped chocolate, chips, or discs
Preheat oven to 350 degrees F.
Begin by browning the butter. In a saucepan over medium heat, add butter, stir and swirl until golden brown and nutty smelling.
Remove from heat and pour into large mixing bowl. Add in sugars and vanilla. Let cool for ten minutes.
Add in egg and yolk, stir till combined and glossy. Add salt, flour, and baking soda and mix with spatula into no streaks of flour remain. Stir in chocolate.
Form into balls and bake for 8 to 10 minutes. You want them to still look a little gooey when you pull them out of the oven.
