Strawberry Brown Butter Cobbler
8 tablespoons salted butter (if using unsalted, add 1/4 teaspoon more of salt)
1 cup all purpose flour
1 1/2 teaspoons baking powder
1/2 cup white sugar
1/4 cup brown sugar
1/2 teaspoon salt
1 cup buttermilk or regular milk
12 to 16 ounces of fresh or frozen strawberries, slices or whole
1/4 cup sugar
Preheat oven to 350 degrees F.
Begin by combining berries and 1/4 cup sugar. Set aside and let sit to macerate while you make the batter.
In a saucepan over medium heat, add butter, stir and swirl until golden brown and nutty smelling. Remove from heat and pour into an 8 by 8 inch pan.
In a bowl combine flour, baking powder, salt, sugars, and milk. Whisk until just combined and no clumps remain. Pour into 8 by 8 inch pan with the butter.
Pour strawberries and top and make sure they are evenly spread.
Bake for 20 to 30 minutes in preheated oven.
Enjoy with vanilla ice cream.
