Pumpkin Yummy Cookies

One of my favorite fall cookie recipes. These Pumpkin Yummy Cookies are soft pumpkin cookie clouds with orange zest and raisins. Leave out the raisins if you aren’t a fan, but leave in the orange zest, it adds a little something special. The frosting on these cookies is made of browned butter and powdered sugar. I highly recommend making extra and frosting other delicious things with it, like apple loaf or pumpkin bread.

Pumpkin Yummy Cookies

¾ cup brown sugar

1 cup pumpkin

½ cup butter

1 tablespoon orange zest, or zest from one large orange

2 cups flour

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon cinnamo

3/4 teaspoon salt

optional: ½ cup raisins

Glaze:

¼ cup browned butter

2 cups powdered sugar

1 teaspoon vanilla

1-2 tablespoons milk 

For the cookies beat pumpkin, butter and sugar together.

Combine dry ingredients and slowly incorporate in to sugar and butter mixture.

Drop by the spoonful on to baking sheet

To make glaze, brown butter on stove top then add the rest of the ingredients.

Drizzle on cookies when they are cool.Pumpkin Yummy Cookies
