Blackberry Cheesecake Bars

A cheesecake brownie might be the best of all possible worlds. Brownie AND Cheesecake.

I also recently discovered how amazingly blackberry goes with chocolate, different from raspberry which is more acidic and bright, blackberry has earthy tones that lend themselves well to being paired with chocolate.

Blackberry Cheesecake Brownies

1 stick butter

1 1/4 cups sugar

3/4 cup cocoa powder

2 eggs

3/4 teaspoon salt

1/3 cup flour

Cheesecake layer:

4 ounces cream cheese

1 egg yolk

1/3 cup sugar

1/3 cup blackberry jame

Instructions:

Preheat oven to 350 degrees F. Line an 8 inch pan with parchment paper.

In a saucepan over medium heat, melt butter. Remove from heat and stir in sugar and cocoa powder. Stir in eggs, mix until incorporated. Add flour and salt and mix just until flour is incorporated.

Using a hand mixer, food processor, or stand mixer, beat cream cheese and sugar until light and fluffy about 2 to 3 minutes. Add egg yolk and mix.

Spread 2/3 of brownie batter on bottom of prepared pan. Dollop cream cheese mixture and spoonfuls of blackberry jam randomly over the top of the brownie batter. Dollop the rest of the batter on top of the cream cheese and blackberry jam. Use a knife or skewer to create swirls with the batter.

Bake for 20 minutes.
